Oyster in a Spoon: beet granita, horseradish panna cotta
Endive marinated with oranges: laminate kale, goat cheese, black olive crouton, roasted carrots
Razor Clam in the Shell: red chili sauce, lobster broth, caviar, chorizo seco
Juniper Crusted Fillet Mignon: beef fat seared turnip, sweet potato mash, pickled elderberry reduction
